Vanilla yogurt cake

Gluten free, higher in protein and lower in sugar than most other recipes!

Ingredients

  • 3 eggs
  • 145 g coconut sugar
  • 1 tsp vanilla
  • zest of 1 lemon or orange
  • 125 g of non-fat greek yogurt (the lower the fat, the higher the protein content, don’t worry, the next ingredient makes up for those healthy fats)
  • 100 g extra virgin olive oil
  • 1 TBSP baking powder
  • 190 g oat flour


Directions

  1. Preheat oven to 356F. Beat the eggs and sugar til they double their volume
  2. Add the vanilla, zest, yogurt and oil. Beat to incorporate
  3. Leave the electric mixer aside. Combine the flour with the baking powder and sift it into the wet ingredients. Don’t do it all at once. Add it in batches and use a spatula to gently incorporate to the batter so that it doesn’t lose the volume.
  4. Transfer to a round cake mold (abt 20 cm diameter) and cook 30-35 min or until a toothpick comes out clean
