Fish en Papillote

Gluten free, Dairy free and VERY nutritious

Ingredients

  • 4 White Fish fillets (like Cod or Halibut, about 1 inch thick)
  • 1 white onion, julienned
  • 1 small red bell pepper, julienned
  • 1 medium carrot, julienned
  • 12 asparagus spears
  • 2 TBSP capers
  • 2 TBSP sliced olives
  • 2 TBSP sundried tomatoes in olive oil, chopped
  • 2 garlic cloves, minced
  • 1 lemon, sliced into thin coins
  • Extra Virgin Olive oil
  • Salt & Pepper
  • Unbleached Parchment Paper


Directions

  1. Preheat the oven to 400 F
  2. Prep all your vegetables and ingredients
  3. Pat the fish dry and season with salt & pepper
  4. Cut the parchment paper into 4 rectangles, about 13″ x 16″
  5. Visually divide your vegetables into 4 and place them making a “bed” over each parchment paper
  6. Place a filet on top of each bed of veg.
  7. Top with 2 slices of lemon, a bit of garlic and any veggies left on the cutting board
  8. Fold the paper over the fish to make a sealed packet, kind of like making an “empanada” =) You can watch the video for reference
  9. Place each packet onto a baking tray and cook for 15 min at 400 F
  10. Fish should be done, but if you have a thicker filet please make sure it is cooked throughly (one way to know is to pull apart with a fork, and if it easily flakes, then it should be done)
  11. Serve and enjoy this quick, mess free meal. My kids loved it too!!!
